What exactly does the term 85/15 or 80/20 refer to when talking about ground beef products?

 bytes)As simple as this question may sound to some, it is understandable why it is asked. When someone first enters the foodservice business they have to learn a whole new language. It is like learning to operate a computer. You cannot just sit down at the keyboard and know what to do. Yet many sales people are sent out on the street without the proper knowledge and expected to know the language.

Our business is filled with abbreviations and terms that are impossible to know except by asking. I remember selling different sieve sizes on green beans for nearly a year before I finally found out what a sieve size was. The same with WOG chickens, BRT hams, P&D shrimp, TVP, PDBT, etc.

The term 85/15 means 85 percent lean meat and 15 percent fat. 80/20 means 80 percent lean meat and 20 percent fat. The important point to remember is that it is OK to ask.
